Serves 4 People
Take the pancetta and tightly wrap it around each asparagus spear. Once all spears have been wrapped, refrigerate for about 20 minutes or until chilled.
While the asparagus is chilling, mix together the dressing. Stir the zest and orange juice with the olive oil and mustard. Once the ingredients are completely blended, season them with salt, pepper and oregano. Set aside until later.
Grill the asparagus spears over medium heat on a grill or in a pan, turning often for about 5 minutes or until they are tender and the pancetta is crisp.
Place the grilled asparagus on a platter and drizzle the dressing over the pancetta wrapped asparagus.
